Sandwiches are also very versatile as they can be eaten as a snack or as breakfast, lunch or dinner.
Many moms and dads prepare a sandwich or two for their kids to bring with them, depending on their appetites. Here are ten easy sandwich recipes for breakfast and lunch when you’re in a bind.
1. Vegetarian BLT with Shiitake Bacon
The ingredients for this sandwich are 14 ounces shiitake mushrooms, ½ teaspoon sea salt, 1½ tablespoons tamari, 1½ tablespoons olive oil, ¼ teaspoon ground black pepper, 2 tablespoons mayo, 2 lettuce leaves, 2 slices of bread, and 3 slices of tomato.
Preheat your oven to 400 degrees Fahrenheit. Mix together the salt, pepper, tamari, mushrooms, and oil, then place on a large baking sheet. Bake for 20 minutes, turning the mixture after 10 minutes.
Next, take your lightly toasted bread and place lettuce, tomatoes, and mayonnaise on top of the bread before pouring the hot mixture onto your sandwich.
2. Breakfast sandwich with leftover pancakes
You will need an egg, cooking spray, a slice of ham, cheddar cheese, 2 tablespoons of maple syrup, and 2 buttermilk pancakes.
Heat your pan over medium-high heat and spray with your cooking spray. Continue cooking the egg the way you like it, then reheat your slice of ham in the pan. Place your two pancakes in your toaster to toast them.
Place your boiled egg on top of one of the toasted pancakes, then top the egg with a tablespoon of maple syrup. Add your cheddar to the egg, then layer your cooked ham over the cheese.
Add your second pancake to your mix to seal the deal before pouring your second tablespoon of maple syrup onto your sandwich.
3. Fried Egg Sandwich
You will need 2 tablespoons of ketchup, 2 tablespoons of mayonnaise, 2 teaspoons of butter, four eggs, eight slices of bread, four slices of American cheese, and some salt and pepper. This recipe is for four people.
Start by melting your butter over a skillet over medium-high heat. Next, cook your four eggs in the pan until they reach the desired firmness. Continue placing your slices of melted cheese over each of the eggs just before they are fully cooked.
Once your cheese has melted, you should place each egg on a slice of white or brown bread. Add some salt and pepper for seasoning, then add mayo and ketchup to your remaining bread slices before squeezing the bread slices together to complete your sandwiches.
4. Avocado Egg Salad Sandwich
You will need 2 lettuce leaves, 4 slices of toasted bread, 1 tablespoon chopped chives, ⅛ teaspoon ground pepper, ¼ tablespoon salt, ¼ cup chopped celery, three chopped hard-boiled eggs, 1 teaspoon avocado oil, 1 ½ teaspoons lemon juice, and half an avocado to make this sandwich close.
Scoop out the avocado flesh and place in a clean bowl. Add the avocado oil and lemon juice to the bowl, then blend the ingredients until smooth. Add the pepper, salt, celery, chopped eggs and chives to the mixture and stir together.
Next, divide the mixture into two portions and then place each portion on a slice of bread. Add a lettuce leaf to each slice before adding your second slice to each to form two sandwiches.
5. Cheese Egg Omelet Sandwich
You will need a few slices of Swiss cheese or cheddar, two slices of bread, an egg, a tablespoon of vegetable oil, half an onion roughly chopped, a chopped green chilli, pepper, salt, and two tablespoons of chopped cilantro.
In a clean bowl, whisk together the salt, pepper, onion, cilantro, chili, and egg. Heat a nonstick skillet, then add your oil. Place your whipped mixture on the pan, then reduce the heat to medium-low. Spread the mixture out to form a rectangle before topping your omelette with your bread.
Sprinkle pepper on top, then flip the omelette as soon as you notice the sides beginning to brown. Layer a slice or two of cheese over your omelette before closing your sandwich. If you like, you can add some pepper to your sandwich.
6. Eggplant Mozzarella Sandwich
You will need 6 teaspoons of pesto, 2 teaspoons of oil, ½ teaspoon of salt, 8 slices of bread, 4 slices of eggplant, 4 slices of mozzarella, and 4 slices of zucchini.
Heat your pan and add 1/2 teaspoon of oil. Once hot, layer your eggplant slices on top, then add 1/4 teaspoon of salt. Let the slices cook for two minutes before flipping them. Spread another half teaspoon of oil, then wait two minutes.
Remove the eggplant slices from the pan, then add 1/2 teaspoon of oil over the pan, spreading evenly. Continue placing your zucchini slices on the pan and sprinkling ¼ tablespoon of salt on top.
Cook for two minutes before turning. Spread your remaining oil and let the slices cook for two more minutes. Apply a teaspoon of pesto to your bread. Place your eggplant and zucchini slices on the bread. Add your mozzarella slices, then spread some pesto on the remaining bread slices.
7. Grilled Chicken Sandwich
You will need an inner leaf of diced lettuce, a sliced tomato, some pepper and salt, a thin slice of onion, two palm-sized chicken breasts, and two slices of bread.
Grill your chicken until well cooked, then add the chicken to your bread. Put some salt and pepper on one slice and lettuce, tomato and onion on the other.
8. Sandwich with chickpea salad
You’ll need some lemon juice, pepper, salt, apple cider vinegar, caramelized onions, 1/2 cup lettuce or spinach, 2 tablespoons roasted red peppers, 1 tablespoon celery, 1/2 cup chopped chickpeas, 1 diced onion, and 2 slices of white or brown bread.
Mix in your chickpeas, celery and onions. Add your lemon juice, pepper, salt and vinegar. Fry your bread slices with spinach or lettuce, peppers and caramelized onions. Spread your first mixture on the bread to complete your sandwich.
9. Tartine with caramelized onions and sour cherries
You will need ¼ tablespoon thyme leaves, ¼ teaspoon salt, 1 tablespoon unsalted butter, 2 slices of sourdough bread, 1/2 cup chopped and pitted sour cherries, 1/2 teaspoon light brown sugar, 1 sliced yellow onion, and 1 tablespoon canola oil.
Start by preheating your oven to 475 degrees Fahrenheit. Heat your oil in a pan before adding salt, sugar and yellow onions. Stir occasionally, until onions are golden brown and soft to the touch, 19 to 20 minutes.
Continue spreading your butter on one side of each sourdough bread slice, then place the bread on a baking sheet, buttered side up. Bake for about five minutes and then top the bread with freshly caramelized onions, cheese and some cherries.
Bake your sandwich at 475 degrees Fahrenheit for about 9 to 10 minutes, then sprinkle some thyme over the sandwich to finish it off.
10. Pea Radish Tea Sandwiches
You will need 1 cup arugula, 1/2 teaspoon black pepper, eighteen slices of bread, 1 teaspoon salt, 1/2 teaspoon lemon zest, 2 teaspoons chopped tarragon, 2 teaspoons fresh lemon juice, 2 tablespoons mayonnaise, 1/2 cup chopped radishes, a pack of cream cheese and a 1/2 cup frozen sweet peas.
Mix the pepper, salt, lemon juice and zest, tarragon, mayonnaise, radishes, peas and cream cheese in a bowl. Divide your mixture among nine slices of bread, then top each slice with your pea sprouts.
