  1. Combine cornstarch, Cajun seasoning, and salt in the bottom of a large bowl. Add okra and toss to coat. Drizzle with the oil and toss again.
  2. Working in two or three batches, place okra in a single layer in air fryer basket (do not overfill) and heat to 400°.
  3. Halfway through the time, bake the okra until golden and crispy, about 18 minutes. Transfer to a plate and sprinkle with more salt. Repeat with the remaining okra.
  4. Meanwhile, mix the sour cream, mustard, and hot sauce in a small bowl. Season to taste with salt. Squeeze a lemon wedge over cooked okra and serve with more lemon wedges and the mustard sauce.
