Cheesy Skillet offers Mac and Cheese Flight at Lewiston-Auburn Airport – Advice Eating

The Cheesy Skillet at Lewiston-Auburn Airport isn’t just another new restaurant. Owner Danny Caron is a retiring cooking teacher and his staff are alumni. In the kitchen they cook anything and everything with cheese. “Megan is one of my graduates. Kyle is one of my graduate students. DJ is one of my graduates,” Caron told WMTW. Caron always dreamed of opening his own shop. If you like mac and cheese, you’ll love Cheesy Skillet, the little cafe where cheese makes everything. “We really specialize in fine dining. We make our own short ribs, we braise our own short ribs, we smoke our own pork and we make pulled pork mac and cheese,” said Caron. The Cheesy Skillet opened in late April. “One of our most popular dishes is called Flight , and you get a taste of all the macaroni and cheeses,” said Caron, his wife and two sons who work at the restaurant, as well as former culinary students like Megan Cullins: “Everything I can, I really learned from him. He’s such a great multi-tasker and a great teacher,” said Cullins. “Our cheese sauce has about 8 cheeses. No roux, roasted peppers, caramelized onions.” “I love what I t ue, and I still love what I do. I actually still love what I do – both – I teach in the mornings and I run over here and then I run back tonight to have a party at The Green Ladle,” said Caron. After spending seven years planning his semi-retirement and planned, he’s slowing down. In the fall, Caron will only be teaching occasionally. The Cheesy Skillet opened at the end of April.

Carson is retiring after more than 25 years teaching cooking classes for The Green Ladle at Lewiston Regional Technical Center.

His wife and two sons work in the restaurant, as well as former culinary students such as Megan Cullins.
